I love hummus. It’s a dish of my childhood.A dish I would see at home, at corner stores and at Middle Eastern restaurants.
I ate it with everything and shared it on many occasions with friends and family.
We ate it with pita bread, with falafel, shashlik and even with grilled fish.
How I’d like to continue eating and celebrating this traditional dish?!
Yet times have changed and my dietary requirements have changed.
So I’m looking at updating the traditional hummus to an easy quick version.
I looked for alternatives and there are.
So here’s my take on an updated version of the traditional hummus.
Yes, it’s roasted cauliflower hummus.Easy to make, share and enjoy.
Roast a cauliflower [cut into florets] in olive oil. If desired you can add some garlic and or tahini. Whirl it in a food processor and serve. You can also drizzle on top some olive oil as well as sprinkle paprika and fresh parsley.
Some lemon juice and black olives would be a great addition.
You can serve it with pita bread, crackers or sticks of carrot and celery.
Most important is that it is a dish to be shared with good company.
To laugh, to chat and enjoy the space created – that is my intention.
