Vegetables are part of my staple modern diet and I have taken them for granted. I thought that when I’d want to eat them they would be there. I became aware that many are seasonal and not grown locally. So my diet needed to be adapted to the availability and taste of others.
Here I am at the Sanctuary kitchen in Virginia – washing, chopping, slicing and dressing salads. Watching how these plants are being treated. They’re steamed, baked, grilled and cooked. Daily meals prepared and served. I’d see people’s vegetable preferences and how they would always choose the same vegetables. I was perplexed why they didn’t try different vegetables and new dishes. I also observed what I was doing and came to the conclusion that I also had preferences in the vegetables that I put on my plate.
I saw when red cabbage was served I’d get a second. I sensed my juices flowing, my eyes loving the colour and texture. It triggered a joyous memory of my family’s European background. Yet, I sensed that there was more and there was – a past cycle way back in the Middle Ages, Eastern Europe – sitting, eating with family and celebrating special days.
Daily I peeled and sliced carrots. Loved their shape and fresh smell. When eating them I sensed a familiar sensation. There it was – a carrot dish served with rice and raisins in Persia (Iran). Once again a table full of food and people – rejoicing, laughing, singing and chatting.
Twice a day I’d fill up the lettuce bowls so that those at the Sanctuary could serve themselves and choose what they desired. My feelings regarding the lettuce were mixed. There were days that I’d love filling up the bowls and days that I didn’t really want to do it nor eat any. Sure enough the answer came – ancient Egypt – a family that did not enjoy each other’s company. Lots of challenges at the table where lettuce was served with hummus and pita bread. That too remained in my memory bank and makes sense why I find this food and its spices hard to digest – a cellular memory.
Vegetables, the plants that support our well-being. The plants that have been with us in the physical as well as in the subtle for many centuries. They are, as we are, in the eternal NOW. If we are wise we would pay attention to their messages – the messages from Mother Nature – balance in the physical, emotional, mental and spiritual dimensions.
