    Hi All

These are great. I made this recipe with 400gms ground almond meal and 12-18 soaked pitted dates, and some almond or vanilla essence.
The packets at the supermarket we go to tend to be 400gms though once we had 500gms.

The dates just need to be soaked in a little hot water and then squished with a fork. No need for a pulveriser or blender. The first time I did it I must have had around 18 dates. I put on gloves and used both hands to make the balls. The second time I had 12 dates and somehow managed it with one hand. The mixture was more crumbly but after having been in the fridge the balls hardened up. It was also not very sweet as I had only had 12 dates and too much vanilla essence. In time it all soakded in and was fine. Wondering whether or not o put in a but of almond past or peanyt butter.

I recall that when Kevin Hunter was in Melbourne we had a bliss ball recipe that involved using protein powder, xylitol, and peanut or nut butter. I think the almond meal recipe is nicer and probably cheaper.
    love, Maryna
