Serves 6
INGREDIENTS
2 avocados, sliced
¼ cup minced white onion
3 tablespoons lime juice
3 tablespoons chopped pistachios
3 radishes, thinly sliced
1 assorted raw vegetables, for dipping
DIRECTIONS
- In a bowl, mash together avocados, onion and lime juice
- Stir 2 tbsp pistachios and season with salt
- Transfer to a serving bowl
- Top with remaining 1 tbsp pistachios and radishes
- Serve with vegetables
- Keep it cool
Note:
Stop guacamole going brown:
Press plastic wrap on top and refrigerate for up to a day
