mangosteen – a fruit of the tropics

Every time I went to Bali the first thing I wanted was to have – mangosteen.
Sure enough my buddy, Wayan came to see me and with her a bag full of Balinese sweets and fruit. I could see clearly my favourite fruit – mangosteen.
We sat on the front porch enjoying this juicy delicate fruit.
When I came back to Melbourne I decided to create a mangosteen delight.
I searched for a recipe that would give me the base and I did.
It’s vegan sourdough pancakes. Then to top it I added lime zest syrup and finally
placed on top the mangosteen fruit. Hence, a mangosteen delight.
So here it is
Vegan Sourdough Pancakes
Yields five, 4-inch pancakes
what to use
- 2 tablespoons coconut oil plus more to oil the pan as necessary
- 1 cup sourdough starter – straight from the refrigerator
- 2 tablespoons almond flour
- ¼ teaspoon salt
- ¼ teaspoon baking soda
putting it together
- melt the coconut oil in a pan and allow it to cool.
- stir the almond flour into the sourdough starter in a bowl
- pour the melted oil into the sourdough mixture. Mix the ingredients
- stir in the salt and baking soda. Allow the thick batter to sit for 3 minutes
- for each pancake – pour ½ cup of the batter into the pan [over medium heat]
- flip when bubbles appear on the edges of the pancakes
- remove from pan when both sides are brown
- melt more coconut oil in the pan and repeat with the left over batter
- drizzle the lime zest syrup over the pancakes and fresh or tinned mangosteen

- combine in a pot ½ a tablespoon monk fruit sweetener with 2 cups of water
- add the zest of 1 lime
- bring to the boil and stir/ reduce the heat/ simmer for 5 minutes/ let it cool
