Music Player Instruction: play and enjoy the snack
It was a Melbourne Summer day and it was hot. I was having time out. I put on the NOW CD and sat outside to relax. That was when I thought of creating a new and simple vegan snack.
I had at home some cranberries, Medjool date syrup, apricots, pistachios and almonds. So here it is.
I used
- 10 fresh apricots [ I’m sure that you can use dried ones too]
- 1½ cups of slivered almonds with a handful of unsalted chopped pistachios
- ½ cup of dried cranberries
- date syrup which I had in the fridge – I blended 1½ cups of dates with 1½ cups of water till smooth – added water to dilute
how did I do it
- washed and dried the apricots/ cut in half/ removed kernels/ placed on tray
- topped each half with some slivered almonds and pistachios
- sprinkled a few cranberries on top of each half
- drizzled date syrup over each half
- enjoyed my new snack

Note
the quantity used can be altered according to needs
balsamic vinegar can be brushed onto the halves to preserve the colour
lemon juice can be used in the syrup so it lasts longer
time permitting use a sieve when making the date syrup
if not served immediately – place in the fridge and drizzle syrup just before serving
