Spiced red cabbage with prunes

Ingredients

• 2 large onions, chopped
• 2 tbsp olive oil
• 1 tsp mixed spice
• 900g/ 2lb red cabbage, shredded
• 150ml stock, made with 1 vegetable or chicken stock cube
• 2 tbsp red wine vinegar
• 8 5g pitted prunes
• 2tbsp red currant jelly

Method

1. Fry the onion in the oil until beginning to soften
2. Tip in the mixed spice
3. Fry for a few seconds
4. Add the remaining ingredients
5. Season
6. Stir well
7. Cover and simmer for 20mins
8. Stir now and then, until tender
9. On the day, reheat in a pan
