what to use
- ½ ripe watermelon – can be diced/cubed/cut into triangles
- ½ cup or more of pitted Kalamata olives
- ½ cup or more of freshly chopped parsley
- 2 to 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- salt and pepper to taste
putting it together
- cut the watermelon into ½
- dice/ cube/ cut into triangles
- place into a bowl
- add the Kalamata olives
- in a small bowl – combine the olive oil/ balsamic vinegar/ salt and pepper
- drizzle the dressing over the watermelon
- sprinkle with freshly chopped parsley and serve
- enjoy
