
Music Player Instruction: play and get inspired
I love the sweet and soft taste of figs. As it is a seasonal fruit I decided that I’d like to have figs during the cold months. Fresh figs were not to be found so a good alternative was to use the packet of dry figs I bought in the local deli.
With the figs in my hands I came up with an appetizer that can be used as a dip or
as a filler. So here it is
WHAT TO USE
- 1 cup of dry figs
- ¾ cup of pitted Kalamata black olives
- 3-4 tablespoons of extra virgin olive oil
- 1 teaspoon balsamic vinegar
- ½ teaspoon of lemon juice
- 2 teaspoons of diced dill pickles
- 1 tablespoon roasted pine nuts to sprinkle
HOW TO DO IT
- prepare – cut stems off and dice – figs/ olives/ dill pickles
- place in a bowl – figs/ olives/ olive oil/ balsamic vinegar/ lemon juice/ pickles
- mix until chunky – use more oil if needed/ food processor can be used
- place on a serving platter
- sprinkle roasted pine nuts
- serve with sourdough pita chips/ crackers/ a hummus side dish
- enjoy
